In the six weeks since Lachlan Howieson was appointed Head Chef at Metro Hotel Ipswich International’s Harvest Restaurant & Bar, the culinary whiz has made a big impact.
In the same period of time, the Restaurant’s rating on Tripadvisor has swung from #135 to #25.
Previously Head Chef at Escobar Restaurant in New Farm and Sling Lounge in West End Brisbane, Lachlan started his apprenticeship under well-known Brisbane chef Alastair McLeod, food ambassador for the Lockyer Valley Scenic Rim.
“Cooking is my passion,” Lachlan said, “You can make someone’s day with a single dish. It allows me to be creative, and to really push the boundaries of modern Australian food.”
The Hotel’s signature Harvest Restaurant & Bar serves dishes using the local produce of the Greater Ipswich Region, from the Lockyer Valley to the Scenic Rim and Somerset.
The restaurant offers a more relaxed lunch menu throughout the day, and a full a-la-carte dinner menu of an evening with a selection of meals to suit every taste.
Lachlan said Harvest Restaurant’s menu will change each season to reflect the best quality produce the region has to offer.
“Our autumn menu offers a 14-hour slow-cooked beef brisket which is very popular with guests and locals alike. We use a house blend of spices, and the juice from the pan is used to make the sauce for the dish. This is then served with brussel sprouts and pancetta,” Lachlan said.
“Another favourite is our autumn soup of pea, smoked ham with cress and croutons. We also offer a house made brownie for dessert with toffee crumb, rosemary salted caramel and vanilla ice cream.”
