Metro Hotel Perth has just enjoyed a $14 million revamp, gaining freshly minted restaurant along with it. Named Red Bill, the 100-seater is headed by Jesse Emerton-King. Originally from Wollongong, Jesse started his apprenticeship in Sydney, finished it in Perth, then winged his way over to England and Germany.
“I worked in Cambridge for three years, then worked for two years just south of Frankfurt,” Jesse says. “In England, the food wasn’t too different to Australia, but in Germany they grow up loving cooking. As they have proper seasons, they get really excited about strawberry or asparagus time. It’s a little harder over here, but I really try to cook within the seasons.”
Red Bill’s autumn menu is set to benefit from Jesse’s German experiences, with warmer, heartier dishes up for grabs, such as slow-cooked ragu.
